  • 2 cups (480ml) milk (any kind; whole milk or almond milk for dairy-free)
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 4 tablespoons (57g) unsalted butter, melted
  • ¼ cup (50g) light brown sugar
  • 1 teaspoon ground cinnamon (additional for swirl)
  • 1 cup (120g) powdered sugar
  • ½ teaspoon vanilla extract (for glaze)
  • 23 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×9-inch baking dish with butter or nonstick spray.
  2. In a large bowl, whisk together rolled oats, baking powder, ground cinnamon, brown sugar, and salt.
  3. In another bowl, whisk milk, eggs, vanilla extract, and melted butter until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Let the batter sit for 5 minutes to thicken.
  5. In a small bowl, mix light brown sugar and additional ground cinnamon for the cinnamon swirl.
  6. Sprinkle half of the cinnamon sugar mixture evenly over the bottom of the prepared baking dish.
  7. Pour half of the oat batter over the cinnamon sugar layer.
  8. Sprinkle the remaining cinnamon sugar mixture evenly over the batter.
  9. Add the remaining oat batter on top and gently spread to cover the cinnamon sugar swirl.
  10. Bake for 35-40 minutes until the top is golden brown and the center is set (toothpick should come out mostly clean).
  11. While cooling for 10 minutes, whisk powdered sugar, vanilla extract, and 2-3 tablespoons milk or cream until smooth and pourable to make the glaze.
  12. Drizzle the vanilla glaze over warm slices of baked oatmeal and serve.

Notes

Let the batter sit for 5 minutes before baking to allow oats to absorb liquid. Use old-fashioned rolled oats for best texture. If glaze thickens, whisk in more milk. For vegan version, use flax eggs and plant-based milk and butter substitutes. For gluten-free, use certified gluten-free oats. Avoid overbaking to prevent dryness.
