Cozy Honey Butter Dinner Rolls

Soft, sweet, and buttery dinner rolls with a honey butter glaze, perfect for any occasion and easy to make ahead.

  • 3 ½ cups (440g) all-purpose flour
  • 2 ¼ tsp active dry yeast (one packet)
  • 1 cup (240ml) warm whole milk (about 110°F / 43°C)
  • 4 tbsp (57g) unsalted butter, softened
  • ¼ cup (85g) honey, plus extra for brushing
  • 2 tbsp granulated sugar
  • 1 tsp salt
  • 2 large eggs, room temperature

Instructions

  1. Warm 1 cup (240ml) whole milk to about 110°F (43°C). Stir in 2 ¼ tsp active dry yeast and 1 tbsp sugar. Let sit for 5-10 minutes until foamy.
  2. In a large bowl or stand mixer, combine 3 ½ cups (440g) all-purpose flour, 1 tsp salt, 1 tbsp sugar, and the remaining sugar. Add 4 tbsp softened unsalted butter, ¼ cup (85g) honey, 2 room-temp eggs, and the yeast mixture. Mix on low speed or stir until dough just comes together.
  3. Knead dough for 8-10 minutes by hand or 5-6 minutes with a stand mixer until soft, smooth, and slightly tacky but not sticky. Add flour if too sticky or milk if too dry.
  4. Shape dough into a ball and place in a greased bowl. Cover and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  5. Punch down dough and turn onto a floured surface. Divide into 12 equal pieces (about 2 oz / 56g each). Roll each into a smooth ball and place in a greased 9×13-inch baking dish.
  6. Cover rolls loosely and let rise for 30-45 minutes until puffy and nearly doubled.
  7. Preheat oven to 350°F (175°C). Bake rolls for 20-25 minutes until golden brown and cooked through.
  8. Melt 2 tbsp unsalted butter and mix with 2 tbsp honey. Brush glaze over warm rolls right after baking.
  9. Let rolls cool for 10 minutes before serving.

Notes

For make-ahead, refrigerate dough overnight after first rise. Use warm (not hot) milk to activate yeast properly. Brush honey butter glaze immediately after baking for shine and softness. Avoid rushing rising times to prevent dense rolls.
