  • 1 pound ground beef or Italian sausage (can substitute ground turkey)
  • 1 medium yellow onion, finely diced
  • 34 garlic cloves, minced
  • 28 oz can crushed tomatoes (San Marzano recommended)
  • 15 oz can tomato sauce
  • 4 cups beef or chicken broth (low sodium recommended)
  • 68 lasagna noodles, broken into bite-sized strips (fresh or dried)
  • 1 tablespoon Italian seasoning (basil, oregano, thyme, rosemary blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (about 100 g)
  • 1/2 cup grated Parmesan cheese
  • A handful fresh basil, chopped

Instructions

  1. Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat until shimmering, about 2 minutes.
  2. Add diced onion and cook until translucent and soft, about 5 minutes, stirring occasionally.
  3. Add minced garlic and cook for another 1 minute until fragrant, being careful not to brown.
  4. Add ground beef or Italian sausage, breaking it up with a spoon. Cook until browned and no longer pink, about 7-8 minutes. Drain excess fat if necessary.
  5. Stir in crushed tomatoes, tomato sauce, and broth. Mix well.
  6. Add Italian seasoning, red pepper flakes (if using), salt, and black pepper. Stir and bring to a gentle boil.
  7. Add broken lasagna noodles to the pot. Reduce heat to medium-low and simmer uncovered for 12-15 minutes, stirring occasionally, until noodles are tender but not mushy.
  8. Lower heat to low. Stir in ricotta, half of the shredded mozzarella, and half of the Parmesan cheese until melted and creamy.
  9. Taste and adjust seasoning with more salt or pepper if needed. Add a splash of broth or water if soup is too thick.
  10. Ladle soup into bowls and top with remaining mozzarella and Parmesan cheese. Sprinkle fresh basil over each bowl before serving.

Notes

Stir cheeses gently off heat or on very low heat to avoid clumping or curdling. If soup thickens when cooled, reheat with a splash of broth. For vegetarian version, substitute meat with mushrooms or lentils and use vegetable broth. For dairy-free, use plant-based cheese alternatives or omit cheeses and add coconut cream.
