  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 68 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese (about 110 grams)
  • 1 packet ranch seasoning mix (about 1 ounce / 28 grams)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Cook 6-8 slices of bacon in a skillet over medium heat until crisp (about 8-10 minutes). Transfer to a paper towel-lined plate to drain and crumble once cooled.
  2. Pat dry 2 pounds of boneless, skinless chicken breasts with paper towels.
  3. In a medium bowl, combine 8 ounces softened cream cheese, 1 packet ranch seasoning, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, and a pinch of salt and pepper. Stir until smooth and evenly blended.
  4. Place the chicken breasts in the bottom of the crockpot. Spread the cream cheese mixture evenly over the chicken.
  5. Top with half of the shredded cheddar cheese (about 1/2 cup) and half the crumbled bacon.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  7. About 15 minutes before serving, sprinkle the remaining cheddar cheese and bacon on top. Cover again and let the cheese melt fully.
  8. Once cooked, use two forks to shred the chicken directly in the crockpot. Stir gently to combine with the creamy cheesy sauce.
  9. Garnish with chopped green onions or parsley and serve hot.
