A quick and easy tart featuring flaky puff pastry topped with fresh asparagus and tangy goat cheese, perfect for entertaining or a simple elegant meal.

  • 1 sheet puff pastry, thawed
  • 1 bunch fresh asparagus (about 1 lb or 450 g), trimmed and cut into 2-inch pieces
  • 4 oz (115 g) goat cheese, soft and creamy
  • 2 tbsp olive oil, divided
  • 1 garlic clove, minced
  • 1 tsp fresh thyme leaves
  • Salt and pepper, to taste
  • 1 egg beaten with 1 tbsp water (egg wash)
  • Optional: lemon zest from 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Rinse and trim the asparagus, then cut into 2-inch pieces. Toss with 1 tablespoon olive oil, minced garlic, salt, and pepper.
  3. Roll out the thawed puff pastry slightly to about 12×10 inches if needed. Transfer to the prepared baking sheet.
  4. Score a 1-inch border around the edge of the pastry without cutting all the way through.
  5. Brush the pastry edges with the egg wash, avoiding the inner border.
  6. Spread the goat cheese evenly inside the border in a thin layer. Add lemon zest on top if using.
  7. Arrange the asparagus pieces over the cheese in a single layer. Drizzle with remaining 1 tablespoon olive oil and sprinkle fresh thyme leaves on top.
  8. Bake for 20-25 minutes until the pastry is golden and crisp and asparagus is tender but vibrant.
  9. Remove from oven and let cool for about 5 minutes before slicing.
  10. Slice into 6-8 pieces and serve warm or at room temperature.

Notes

Keep the puff pastry cold until just before baking to maximize puffiness. Use a thin layer of goat cheese to prevent sogginess. Score the edges to help the crust puff up. Rotate the baking sheet halfway through baking for even color. Let the tart rest before slicing for cleaner cuts. Reheat leftovers in an oven or toaster oven to maintain crispiness.
