These crispy bacon-wrapped jalapeño poppers combine smoky bacon, spicy jalapeños, and creamy cheese for a perfect bite-sized party snack that’s quick and easy to make.

  • 12 medium fresh jalapeños, washed and halved lengthwise
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • 12 slices thin-cut bacon
  • 1 tablespoon fresh cilantro, finely chopped (optional garnish)
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if using.
  2. Slice each jalapeño in half lengthwise and carefully scoop out the seeds and membranes. Pat dry with paper towels.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix until smooth and creamy.
  4. Fill each jalapeño half generously with the cream cheese mixture.
  5. Cut bacon slices in half crosswise. Wrap each stuffed jalapeño half tightly with a bacon piece, securing the end underneath. Place seam-side down on the prepared rack or baking sheet.
  6. Bake for 20–25 minutes, or until bacon is crispy and jalapeños are tender but hold their shape. If not using a rack, flip poppers halfway through baking.
  7. Remove from oven and let cool for 5 minutes. Sprinkle with chopped fresh cilantro if desired, then serve warm.

Notes

Use thin-cut bacon for even crisping. Pat jalapeños dry to avoid soggy bacon. Flip poppers halfway through baking if not using a wire rack. You can partially cook bacon for 2-3 minutes before wrapping for extra crispiness. Store leftovers in an airtight container in the fridge for up to 3 days and reheat in the oven to maintain crispiness.
