  • 12 large dry-packed sea scallops
  • 6 slices thick-cut bacon, cut in half
  • 4 tablespoons unsalted butter, melted
  • Juice of 1 large lemon
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Pat the scallops dry with paper towels to remove excess moisture. Season both sides lightly with salt and black pepper.
  2. Wrap each scallop snugly with a half slice of bacon, securing it with a toothpick.
  3. Heat a large skillet over medium heat and add olive oil.
  4. Place bacon-wrapped scallops seam side down in the skillet. Cook for about 3 minutes without moving them to crisp the bacon.
  5. Flip scallops carefully and cook for another 3 minutes until scallops are opaque and bacon is browned and crisp. Avoid overcrowding the pan.
  6. While scallops cook, whisk melted butter, lemon juice, minced garlic, and chopped parsley in a bowl. Season with salt and pepper to taste.
  7. Remove scallops from skillet and arrange on a serving plate. Drizzle generously with the lemon butter sauce and serve immediately.

Notes

If bacon isn’t crisp enough, finish scallops under a broiler for 1-2 minutes. Avoid overcrowding the pan to ensure proper searing. Let scallops rest for a minute before serving to keep them juicy. For dairy-free sauce, substitute butter with vegan margarine or olive oil. Use turkey bacon for a lighter option.
