  • 2 cups shredded cooked chicken breast (rotisserie chicken works perfectly)
  • 3/4 cup barbecue sauce (e.g., Sweet Baby Ray’s or homemade)
  • 1 1/2 cups shredded mozzarella cheese (whole milk preferred)
  • 1/2 cup shredded sharp cheddar cheese
  • 1/2 small red onion, thinly sliced
  • A handful of chopped fresh cilantro for garnish
  • 1 tablespoon olive oil for brushing the crust
  • Optional: sliced jalapeños or diced pineapple for a sweet and spicy twist

Instructions

  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it on the middle rack at least 30 minutes before baking to heat thoroughly.
  2. In a medium bowl, toss 2 cups shredded cooked chicken with 1/2 cup BBQ sauce until evenly coated. Set aside.
  3. Lightly flour your work surface and roll your 12-ounce (340 g) pizza dough into a 12-inch (30 cm) circle. If the dough resists, let it rest for 5 minutes and try again. Brush the edges lightly with olive oil for a golden crust.
  4. Spread the remaining 1/4 cup BBQ sauce evenly over the dough, leaving about 1/2 inch (1.3 cm) border around the edges. Distribute the BBQ chicken mixture evenly on top.
  5. Sprinkle 1 1/2 cups shredded mozzarella and 1/2 cup sharp cheddar evenly over the chicken.
  6. Scatter thin slices of 1/2 small red onion across the pizza. Add jalapeños or pineapple if using.
  7. Transfer the pizza to the hot pizza stone or baking sheet. Bake for 12–15 minutes, or until the crust is golden and cheese is bubbling and slightly browned.
  8. Remove from the oven and let cool for 2–3 minutes. Sprinkle with chopped fresh cilantro before slicing.
  9. Cut into 6-8 slices and enjoy immediately for maximum crispiness.

Notes

If crust browns too fast, tent edges with foil to prevent burning. Use freshly shredded rotisserie chicken for best texture and flavor. Preheat pizza stone for at least 30 minutes for a crispy crust. Avoid overloading toppings to keep crust crisp. For gluten-free, use almond flour or cauliflower crust. For dairy-free, use vegan cheese and coconut-based BBQ sauce.
