These crispy prosciutto-wrapped asparagus bundles are a quick and easy appetizer featuring tender asparagus wrapped in salty, crispy prosciutto with a bright lemon finish. Perfect for entertaining or a tasty snack.

  • 1 lb fresh asparagus spears, trimmed
  • 810 thin slices prosciutto
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Freshly ground black pepper, to taste
  • Sea salt, a light sprinkle
  • Optional: 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Trim the asparagus by snapping off the woody ends near the bottom.
  3. Pat asparagus dry with a kitchen towel or paper towels.
  4. Group asparagus spears into bundles of about 3-4 spears each.
  5. Wrap each bundle snugly with one slice of prosciutto, spiraling from bottom to top. Cut prosciutto slices in half lengthwise if too large.
  6. Place bundles on the prepared baking sheet, spacing them apart for airflow.
  7. Drizzle or brush 2 tablespoons of extra virgin olive oil evenly over the bundles.
  8. Lightly season with black pepper and a small pinch of sea salt.
  9. Bake for 12-15 minutes, checking at 10 minutes to avoid burning. Prosciutto should be crispy and golden, asparagus tender but not mushy.
  10. Optional: Sprinkle grated Parmesan cheese over bundles during the last 2 minutes of baking.
  11. Remove from oven and immediately squeeze fresh lemon juice over the bundles.
  12. Serve warm, best enjoyed straight from the oven.

Notes

Use thin prosciutto slices for best crispiness. Do not overcrowd the baking sheet to ensure even cooking. Pat asparagus dry to avoid soggy prosciutto. If prosciutto browns too quickly, reduce oven temperature by 25°F and bake longer. Can be prepared ahead by wrapping and refrigerating, then baking before serving.
