  • 1 tablespoon finely chopped fresh chives
  • Zest from half a lemon
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: drizzle of good-quality extra virgin olive oil for brushing the bread before toasting

Instructions

  1. Prepare the herbed butter: In a small mixing bowl, combine softened unsalted butter with chopped parsley, chives, and lemon zest. Mix thoroughly until herbs are evenly distributed. Season lightly with sea salt and freshly ground black pepper. Set aside.
  2. Slice the radishes as thinly as possible (about 1/8 inch thick). Place in a bowl and sprinkle lightly with sea salt and black pepper. Toss gently and let rest.
  3. Toast the bread: Heat a skillet over medium heat. Optionally brush bread slices lightly with olive oil on both sides. Cook slices until golden brown and crispy, about 2-3 minutes per side. Alternatively, toast in a toaster or oven until crisp and golden.
  4. Assemble the toast: Spread a generous layer of herbed butter over each warm toast slice. Arrange the seasoned radish slices evenly on top. Sprinkle a little more fresh black pepper if desired.
  5. Serve immediately, optionally garnished with fresh herb sprigs.
