  • 6 cups day-old French bread, cut into 1-inch cubes
  • 3 ripe bananas, sliced
  • 4 large eggs, room temperature
  • 2 cups whole milk (or almond milk for a lighter twist)
  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • Pinch of salt
  • 4 tablespoons unsalted butter
  • ½ cup packed dark brown sugar
  • ½ cup dark rum (optional)
  • 1 teaspoon pure vanilla extract
  • 2 ripe bananas, sliced

Instructions

  1. Preheat oven to 350°F (175°C). Cut day-old French bread into 1-inch cubes and slice 3 ripe bananas thinly.
  2. In a large bowl, whisk together 4 large eggs, 2 cups whole milk, 1 cup heavy cream, ¾ cup granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, and a pinch of salt until smooth.
  3. Gently fold bread cubes and sliced bananas into the custard. Let sit for about 10 minutes to soak.
  4. Melt 4 tablespoons unsalted butter in a skillet over medium heat. Stir in ½ cup dark brown sugar and cook until bubbling and caramel-like, about 3-4 minutes.
  5. Carefully add ½ cup dark rum (if using) and simmer for 2 minutes. Remove from heat and stir in 1 teaspoon vanilla extract and 2 sliced bananas.
  6. Pour half of the bread pudding mixture into a greased 9×13-inch baking dish. Drizzle half of the Bananas Foster sauce over it.
  7. Add remaining bread pudding mixture on top and pour the rest of the sauce evenly over everything.
  8. Bake uncovered for 50-60 minutes, or until custard is set and top is golden brown. Tent with foil if browning too quickly.
  9. Let cool for 10-15 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

Use day-old or slightly stale bread for best texture. Watch sugar carefully when making sauce to avoid burning. Remove pudding from oven when just set to avoid drying out. Can be made gluten-free by using gluten-free bread and dairy-free by substituting coconut milk and cream. Rum is optional; omit for non-alcoholic version and add extra vanilla.
