A quick and easy layered dessert featuring fresh mixed berries, crushed meringue, and lightly sweetened whipped cream, perfect for parties and casual gatherings.

  • 3 cups (450g) fresh mixed berries (strawberries sliced, blueberries, raspberries, blackberries)
  • 4 large meringue nests or 1 cup (100g) crushed meringue
  • 1 cup (240ml) heavy whipping cream, chilled
  • 2 tablespoons (25g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Rinse and gently pat dry all berries. Slice strawberries into thin pieces about 1/4 inch thick. Lightly toss berries together and set aside. (5 minutes)
  2. Place meringue nests in a ziplock bag and gently crush with hands or rolling pin until a mix of chunks and crumbs forms. Transfer to a bowl. (2 minutes)
  3. Pour chilled heavy cream into a cold mixing bowl. Add powdered sugar and vanilla extract. Whip on medium-high speed with an electric mixer until soft peaks form. Avoid over-whipping. (5–7 minutes)
  4. In serving glasses, layer a spoonful of whipped cream, followed by mixed berries, then crushed meringue. Repeat layers until glasses are filled, finishing with a dollop of cream and a few whole berries on top. Garnish with mint if desired. (10 minutes)
  5. Chill parfaits in the fridge for at least 15 minutes before serving to meld flavors and chill thoroughly. Serve cold. (15 minutes)

Notes

Whip cream to soft peaks to avoid grainy texture. Crush meringues to keep some chunks for crunch. Assemble parfaits just before serving for best texture or chill for 15 minutes to meld flavors. For dairy-free, use whipped coconut cream and vegan meringues or crushed nuts. Store leftovers in airtight containers up to 24 hours; meringue will soften over time.
