  • 10 oz (280g) mini marshmallows
  • 4 tbsp (60g) unsalted butter, softened
  • 4 oz (115g) cream cheese, softened
  • 1 tsp vanilla extract

  • Sprinkles or edible glitter (optional)

Instructions

  1. Line a baking sheet or large tray with wax or parchment paper to set your Easter eggs on later.
  2. Melt 4 tablespoons (60g) of unsalted butter in a microwave-safe bowl on high for about 30 seconds to 1 minute until fully melted but not bubbling. Stir gently.
  3. Add 10 ounces (280g) of mini marshmallows to the melted butter. Microwave in 30-second bursts, stirring between each, until marshmallows are completely melted and smooth (about 1.5 to 2 minutes).
  4. Quickly stir in 4 ounces (115g) of softened cream cheese and 1 teaspoon of vanilla extract until combined into a creamy, smooth mixture.
  5. If desired, divide the marshmallow mixture into separate bowls and add a few drops of food coloring to each. Stir until color is evenly distributed.
  6. Pour 6 cups (180g) of Rice Krispies cereal into the marshmallow mixture and gently fold using a spatula or spoon, coating all cereal without smashing it.
  7. Lightly grease your hands with butter or cooking spray. Scoop out portions (about 1/3 cup or 80 grams) and form into oval egg shapes. Place each shaped egg onto the prepared wax paper.
  8. Decorate with sprinkles or edible glitter if desired. Let the eggs cool at room temperature for at least 30 minutes until firm, or chill in the fridge for 15-20 minutes to speed up setting.
  9. Serve immediately or store leftovers in an airtight container.

If mixture hardens before shaping, gently warm in microwave for 10-15 seconds to soften. Use softened cream cheese to avoid lumps. Butter hands before shaping to prevent sticking.
