  • 4 small meringue nests (about 1 cup or 30-40g), crushed lightly

Instructions

  1. Rinse 1 cup (150g) of fresh strawberries, hull, and quarter them. Set aside in a bowl.
  2. Place your mixing bowl and whisk or beaters in the fridge for 10-15 minutes beforehand if possible.
  3. Pour 1 cup (240ml) of heavy whipping cream into the chilled bowl. Add 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract. Whisk vigorously by hand or use an electric mixer on medium-high speed until soft peaks form—about 3-5 minutes.
  4. Break up 4 small meringue nests (about 1 cup or 30-40g) into bite-sized pieces.
  5. Gently fold the quartered strawberries and crushed meringue into the whipped cream with a spatula using light, sweeping motions to keep the cream fluffy and avoid breaking the meringue too much.
  6. Spoon the mixture into serving glasses or bowls and serve immediately.
