Easy Fluffy Blueberry French Toast Casserole

  • 8 cups thick-cut bread cubes (challah, brioche, or Texas toast)
  • 1 ½ cups fresh or frozen blueberries
  • 6 large eggs (room temperature)
  • 2 cups whole milk (or almond/oat milk for dairy-free)
  • 4 oz cream cheese, softened
  • ½ cup granulated sugar (or coconut sugar)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • 2 tablespoons unsalted butter, melted (for greasing and topping)
  • Optional toppings: maple syrup, powdered sugar, whipped cream

Instructions

  1. Cut about 8 cups (about 12 oz/340 g) of thick slices of bread into 1-inch cubes. Spread them evenly in your greased 9×13 inch (23×33 cm) baking dish. Toss the blueberries gently with the bread cubes so they’re well distributed but not squished.
  2. In a medium bowl, soften 4 oz (115 g) cream cheese by beating with a whisk or mixer until smooth and creamy.
  3. In a large bowl, whisk together 6 large eggs, 2 cups (480 ml) whole milk, ½ cup (100 g) granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and ¼ teaspoon salt until fully combined. Add the softened cream cheese in dollops and whisk until mostly smooth.
  4. Pour the custard mixture evenly over the bread and blueberries in the casserole dish. Use a spatula to gently press the bread down so it absorbs the custard well. Let it sit for about 10-15 minutes at room temperature to soak.
  5. Preheat your oven to 350°F (175°C). Grease the edges of the baking dish with 2 tablespoons (30 g) melted unsalted butter.
  6. Bake the casserole uncovered for 45-50 minutes, or until the custard is set and the top is golden brown. A knife inserted in the center should come out clean and the top should spring back lightly when pressed.
  7. Let the casserole cool for about 10 minutes before serving. Serve warm with maple syrup, a dusting of powdered sugar, or a dollop of whipped cream if desired.

Notes

Do not skip softening the cream cheese to avoid lumps. Use thick-cut bread for best texture. Let the casserole soak for 10-15 minutes before baking for fluffiness. Frozen blueberries can be used without thawing to prevent sogginess. If casserole looks wet after baking, let it rest to finish cooking. For a crispier top, broil 1-2 minutes watching closely.
