  • 1 cup fresh strawberries, hulled and quartered (about 150 grams)

  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme (optional)
  • Salt and pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat dry the chicken breasts with paper towels. Season generously with salt and pepper on both sides. (5 minutes)
  2. Heat 2 tablespoons olive oil in a skillet over medium-high heat. Once shimmering, add the chicken breasts. Sear for 5-6 minutes on the first side without moving them until a deep golden-brown crust forms. Flip and cook another 5 minutes until internal temperature reaches 160°F (71°C). Remove from pan and tent with foil to rest. (12 minutes)
  3. Lower heat to medium. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Add quartered strawberries, balsamic vinegar, honey, thyme, and red pepper flakes if using. Stir gently to combine. (2 minutes)
  4. Simmer the mixture for 5-7 minutes, stirring occasionally, until strawberries soften and liquid reduces to a thick, syrupy glaze. Taste and adjust salt or sweetness if needed. (7 minutes)
  5. Return chicken breasts to skillet, spoon glaze over them, and warm through for 2 minutes. Serve immediately with extra glaze on top. (2 minutes)

If the glaze thickens too much, add a splash of water or chicken broth to loosen it. Letting the chicken rest before slicing helps keep juices inside. Use fresh, firm strawberries for best texture.
