  • 4 large eggs, at room temperature
  • 2 tablespoons whole milk or heavy cream (or dairy-free milk alternative)
  • 1 tablespoon unsalted butter
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional fresh herbs such as chives or parsley for garnish

Instructions

  1. Crack the eggs into a bowl and whisk gently with a fork or whisk until yolks and whites are combined but not overbeaten.
  2. Stir in 2 tablespoons of whole milk or heavy cream. Season with a pinch of salt and pepper.
  3. Heat a non-stick skillet over low heat and add 1 tablespoon of unsalted butter. Let it melt slowly without browning.
  4. Pour the egg mixture into the pan and let it sit undisturbed for about 20 seconds until edges start to set.
  5. Gently stir and fold the eggs every 10 seconds using a rubber spatula, pulling eggs from edges toward the center.
  6. After 2-3 minutes, when eggs are mostly set but still glossy and creamy, remove the pan from heat to allow carryover cooking.
  7. Taste and adjust seasoning with salt and pepper. Toss in fresh chopped herbs if desired and serve immediately.

Notes

Keep heat low and stir gently to avoid rubbery eggs. Remove from heat when eggs are slightly underdone to allow carryover cooking. Use butter for best flavor and texture. Add cheese or veggies after cooking to maintain creaminess.
