Bright, colorful, and juicy fruit kabobs inspired by Dr. Seuss’s Cat in the Hat, perfect for a quick, wholesome snack that kids and adults will love.

  • Fresh medium-sized strawberries, hulled and halved
  • Crisp sweet apple (Fuji or Gala), thinly sliced with skin on
  • Fresh or thawed blueberries, small and firm
  • Banana, firm but ripe, sliced into 1/4-inch rounds (optional)
  • Wooden or bamboo skewers, 8-inch standard size
  • 1 tablespoon freshly squeezed lemon juice
  • Honey or maple syrup for drizzling (optional)

Instructions

  1. Rinse strawberries, blueberries, and apples under cold water.
  2. Hull and halve the strawberries.
  3. Slice apples thinly (about 1/4 inch) and immediately toss them in a bowl with 1 tablespoon of fresh lemon juice to prevent browning.
  4. If using bananas, peel and slice into 1/4-inch rounds.
  5. Start threading a halved strawberry onto the skewer to represent the red stripes.
  6. Add an apple slice for the white stripe, alternating red and white pieces, aiming for about three pairs per skewer.
  7. Thread 2-3 blueberries after the striped section to mimic blue accents.
  8. Optionally add banana slices between blueberries for extra creaminess.
  9. Optionally drizzle with a light touch of honey or maple syrup for sweetness and shine.
  10. Serve immediately or chill in the fridge for up to 2 hours covered loosely with plastic wrap.

Notes

Use firm, fresh fruit to prevent kabobs from falling apart. Toss apple slices in lemon juice immediately to prevent browning. For a warm twist, grill kabobs 1-2 minutes per side on medium heat. Store kabobs in an airtight container lined with parchment paper in the fridge for up to 24 hours. Let sit at room temperature 10-15 minutes before serving for best flavor.
