A quick and easy recipe for grilled corn on the cob slathered with a flavorful herb butter made from fresh parsley, thyme, and garlic. Perfect for summer BBQs and family gatherings.

  • 4 ears fresh corn on the cob, husks removed
  • 1/2 cup (1 stick) unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon lemon juice (optional)

Instructions

  1. In a mixing bowl, combine 1/2 cup softened unsalted butter with chopped parsley, thyme, minced garlic, salt, pepper, and lemon juice if using. Mix well until all herbs are evenly distributed.
  2. Remove the husks and silk from each ear of corn. Rinse under cold water and pat dry with a towel.
  3. Preheat your grill to medium-high heat, about 375°F to 450°F (190°C to 230°C). Clean the grates with a grill brush to avoid sticking.
  4. Place the corn directly on the grill grates. Turn every 3-4 minutes so all sides get light golden-brown color with some smokiness, about 15-20 minutes. For juicier corn, wrap each ear in foil before grilling.
  5. Remove corn from the grill and immediately slather generously with the herb butter while still hot. The heat will melt the butter into every kernel.
  6. Serve warm with extra butter on the side and fresh cracked black pepper sprinkled on top if desired.

Notes

If butter is too hard to spread, soften it longer or microwave for 10 seconds. Soak corn in water for 10-15 minutes if grilling with husks to prevent burning and steam kernels. Rotate corn regularly for even cooking and grill marks. For dairy-free option, substitute butter with plant-based margarine or olive oil spread. Lemon juice brightens the butter flavor. Leftovers can be refrigerated up to 2 days and reheated in oven or microwave.
