A quick and easy frozen peach Bellini cocktail that combines ripe peaches and bubbly prosecco for a refreshing summer drink with a creamy, slushy texture.

  • 2 cups fresh or frozen peaches, peeled and sliced
  • 1 cup prosecco or sparkling wine, chilled
  • 2 tablespoons peach schnapps (optional)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon simple syrup
  • 1 cup ice cubes

Instructions

  1. Prepare the peaches: peel and slice about 2 cups if using fresh peaches; frozen peaches can be used straight from the bag.
  2. In a blender, combine peaches, ice cubes, simple syrup, and lemon juice. Blend on high until smooth and slushy, about 30 to 45 seconds.
  3. Add peach schnapps (optional) and pulse the blender a couple of times to mix without losing the icy texture.
  4. Divide the peach slush evenly between two chilled champagne flutes. Slowly pour 1/2 cup (120 ml) of chilled prosecco into each glass, letting it gently mix with the frozen base.
  5. Garnish each glass with a thin peach slice or a sprig of fresh mint and serve immediately.

Notes

Add prosecco after blending the peach base to preserve bubbles. Slightly thaw frozen peaches if blender struggles. Adjust simple syrup to taste. Serve immediately for best texture and fizz. Store peach base separately in freezer up to one week.
