A quick and easy homemade frozen cocktail treat combining fresh strawberries, lime, tequila, and orange liqueur for a refreshing summer delight.

Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 1/4 cup granulated sugar
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/2 cup tequila blanco
  • 1/4 cup orange liqueur (such as Cointreau or Triple Sec)
  • 1/2 cup water
  • Pinch of salt
  • Optional: 1-2 tablespoons agave syrup for extra sweetness

Instructions

  1. In a medium bowl, combine strawberries and granulated sugar. Toss gently and let sit at room temperature for 10 minutes to macerate.
  2. Transfer the macerated strawberries and juices to a blender. Add lime juice, tequila, orange liqueur, water, and salt. Blend until smooth but slightly textured.
  3. Taste and adjust sweetness by adding agave syrup if desired. Blend briefly again to mix.
  4. Pour mixture into popsicle molds, leaving space at the top. Insert sticks and place molds on a baking sheet for stability.
  5. Freeze for 6-8 hours or overnight until solid.
  6. To unmold, run warm water over the molds for a few seconds and gently pull the sticks. Optionally, sprinkle coarse salt on popsicles for a salted rim effect.

Notes

Do not skip the maceration step for best flavor. Use fresh lime juice for optimal taste. Pulse blender to avoid warming the mixture. For a non-alcoholic version, replace tequila and orange liqueur with extra water and orange juice. Salt rim effect can be added after unmolding.
