A hands-off, slow-cooked beef chuck roast infused with ranch seasoning, au jus gravy mix, butter, and pepperoncini peppers, perfect for cozy dinners and crowd-pleasing meals.

  • 3 to 4 pounds beef chuck roast, well-marbled
  • 1 packet (about 1 ounce) ranch dressing mix
  • 1 packet (about 1 ounce) au jus gravy mix
  • 1/2 cup (1 stick) unsalted butter, cut into pieces
  • 1 jar (about 7 to 8) pepperoncini peppers with juice
  • 1/2 cup beef broth (optional)
  • Freshly ground black pepper, to taste
  • 1 teaspoon garlic powder (optional)
  • Salt, to taste

Instructions

  1. Trim any excess fat from the beef chuck roast, leaving enough for flavor but not too much to be greasy.
  2. Season the roast evenly with freshly ground black pepper and garlic powder if using. Do not add salt yet.
  3. Place the roast in the bottom of the crockpot. Sprinkle ranch dressing mix and au jus gravy mix evenly over the top.
  4. Dot the butter pieces all over the roast, then nestle the pepperoncini peppers around and on top of the beef.
  5. Pour in 1/2 cup beef broth if desired to keep the roast moist.
  6. Cover and cook on low for 7 to 8 hours without lifting the lid.
  7. Remove the roast carefully with tongs and shred the meat using two forks into bite-sized pieces.
  8. Return shredded beef to the crockpot and stir into the juices and peppers. Let sit on warm for 10 minutes.
  9. Serve hot over mashed potatoes, egg noodles, or with crusty rolls, spooning the juices over the top.

Notes

If the roast isn’t shredding easily after 7 hours, cook for an additional 30 minutes. To thicken the sauce, mix 1 teaspoon cornstarch with cold water and stir in, cooking on high for 15 minutes. Browning the roast before slow cooking is optional but adds extra flavor. Use low-sodium seasoning mixes to reduce salt. Butter can be substituted with dairy-free margarine for a dairy-free option.
