  • 4 skinless, boneless cod fillets (about 6 oz / 170 g each)
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika (optional)
  • ¼ cup (60 ml) white wine or vegetable broth (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine softened butter, minced garlic, chopped parsley, chopped dill, lemon juice, olive oil, smoked paprika (if using), salt, and pepper. Mix thoroughly until creamy and well combined.
  3. Pat the cod fillets dry with a paper towel.
  4. Place the cod fillets in a single layer in a baking dish, leaving space between them.
  5. Spread the garlic butter herb glaze generously over the top of each cod fillet using a silicone spatula or spoon.
  6. If desired, pour white wine or vegetable broth around the fish (not over the top).
  7. Bake in the preheated oven for 12-15 minutes, or until the cod flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
  8. Remove from the oven and let the cod rest for 2 minutes before serving.

Notes

Pat the cod dry before applying the butter glaze to prevent sogginess. Use softened but not melted butter for a creamy glaze. Tent with foil if butter browns too quickly. Fresh herbs are preferred over dried for brightness. Rest the fish after baking to keep it juicy. Avoid overbaking to prevent dryness.
