  • 3 cloves garlic, minced
  • 1 cup (120g) breadcrumbs (plain or Italian-style)

  • 2 large eggs, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • ¼ cup (60ml) ketchup
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped
  • 1½ teaspoons salt
  • 1 teaspoon black pepper
  • ¾ cup (180ml) ketchup (for glaze)
  • ⅓ cup (70g) packed brown sugar (light or dark)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • ½ teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan.
  2. Heat 1 tablespoon olive oil in a small skillet over medium heat. Sauté diced onion for 3-4 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant. Remove from heat and let cool.
  3. In a small saucepan or microwave-safe bowl, whisk together ¾ cup ketchup, ⅓ cup brown sugar, 1 tablespoon apple cider vinegar, 1 teaspoon Worcestershire sauce, and ½ teaspoon garlic powder. Warm until sugar dissolves (about 30 seconds in microwave or 2 minutes on stove). Set aside.
  4. In a large mixing bowl, combine 1 cup breadcrumbs with ½ cup milk. Let sit for 5 minutes to form a panade.
  5. To the breadcrumb mixture, add sautéed onions and garlic, 2 beaten eggs, 2 tablespoons Worcestershire sauce, ¼ cup ketchup, 1 tablespoon Dijon mustard, 1½ teaspoons salt, 1 teaspoon black pepper, and 2 tablespoons parsley. Stir until uniform.
  6. Add 2 lbs ground beef to the bowl. Using your hands, gently mix until just combined—do not overwork.
  7. Transfer meat mixture to prepared loaf pan. Press gently to eliminate air pockets and shape into a slight dome.
  8. Spoon about ⅓ of the glaze over the top and spread evenly.
  9. Place loaf pan on a baking sheet and bake uncovered for 45 minutes.
  10. Remove from oven, spoon another ⅓ of the glaze over the top, and bake for another 15 minutes.
  11. Check internal temperature—should reach 160°F (71°C). If not, bake 5-10 minutes more.
  12. Let meatloaf rest in pan for 10 minutes before slicing.
  13. Slice into 1-inch thick pieces. Drizzle remaining glaze over slices or serve on the side.

Notes

Don’t skip the panade (breadcrumb-milk mixture)—it keeps the meatloaf tender. Use a meat thermometer for perfect doneness. Let the meatloaf rest 10 minutes before slicing to retain juices. Line the pan with parchment paper for easy cleanup. The glaze can be doubled for extra.
