Best Easy Baked Apple Cider Donuts with Cinnamon Sugar

These baked apple cider donuts are tender, soft, and coated in cinnamon sugar. Made with reduced apple cider for intense flavor, they’re ready in under 30 minutes without any deep frying.

  • 1 ¾ cups all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup packed light brown sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 large egg, room temperature
  • 4 tablespoons unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ¼ cup buttermilk, room temperature
  • For the Cinnamon Sugar Coating:
  • ½ cup granulated sugar
  • 1 ½ tablespoons ground cinnamon
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Reduce the apple cider: Pour 1 cup apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced to about ¼ cup, about 12-15 minutes. Stir occasionally. Remove from heat and let cool.
  2. Preheat oven to 350°F (175°C). Lightly grease a standard 6-cavity donut pan with non-stick spray or melted butter.
  3. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. In a medium bowl, whisk together egg, melted butter, vanilla extract, buttermilk, and cooled reduced apple cider until smooth.
  5. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined. Do not overmix; a few lumps are fine.
  6. Transfer batter to a piping bag or ziploc bag with corner snipped. Pipe batter into prepared donut pan, filling each cavity about ¾ full.
  7. Bake for 9-11 minutes, until golden brown and a toothpick inserted into thickest part comes out clean. Cool in pan for 2 minutes, then transfer to a wire rack.
  8. While donuts are still warm, mix ½ cup granulated sugar with 1 ½ tablespoons cinnamon in a shallow bowl.
  9. Brush each warm donut generously with melted butter on all sides. Immediately dip into cinnamon sugar mixture, turning to coat evenly. Place coated donuts back on wire rack.
  10. Repeat with remaining batter if using a second pan, or let pan cool, re-grease, and bake second batch.

Notes

Don’t overmix the batter. Watch the cider reduction closely to avoid burning. Use room temperature ingredients. Pipe batter for even filling. Coat donuts while warm for best sugar adhesion. Double the batch if needed.
