These black cat sugar cookies are the perfect blend of spooky and sweet, featuring a tender dough that holds its shape and easy decorating techniques using edible markers and royal icing.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 large egg, room temperature
  • 3 to 3.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Black gel food coloring
  • White royal icing or white buttercream
  • Edible marker pens (black and green)
  • Powdered sugar
  • Milk or cream

Instructions

  1. In a large mixing bowl, beat the softened butter and granulated sugar together on medium-high speed until light and fluffy (approx. 5 minutes).
  2. Add the vanilla extract and egg to the butter mixture. Beat on low speed until just combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients on low speed. Mix until the dough just comes together; do not overmix.
  5. Divide the dough in half, flatten into discs, wrap tightly in plastic wrap, and refrigerate for at least one hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. Roll the chilled dough out to about 1/4 inch thickness on a lightly floured surface. Cut out cat shapes using cookie cutters.
  8. Place cutouts on baking sheets, leaving space between them. Bake for 10-12 minutes until set around the edges but pale in the center.
  9. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Once completely cool, decorate with black and white icing or edible markers to create the black cat design. Let decorations set for at least 30 minutes.

Notes

Ensure butter is softened but not melted to prevent spreading. Chill dough thoroughly to make rolling easier and prevent spreading. Use gel food coloring instead of liquid to maintain icing consistency. Measure flour using the spoon-and-level method for best texture. Decorate only when cookies are completely cool to prevent icing from melting.
