Instructions

  1. Caramelize the onions: Heat butter in a large skillet over medium-low heat. Add thinly sliced onions, sprinkle with sugar and a pinch of salt. Stir occasionally until onions soften and turn deep golden brown, about 25-30 minutes. Add a splash of water if onions start sticking.
  2. Prepare the truffle aioli: In a small bowl, whisk together mayonnaise, minced garlic, truffle oil, and lemon juice. Season with salt and pepper to taste. Cover and refrigerate until ready to use.
  3. Form the beef balls: Divide ground beef into four equal portions (about 4 oz each). Handle gently to avoid tough patties.
  4. Preheat the Blackstone griddle over medium-high heat. Lightly grease with vegetable oil or butter.
  5. Cook the smash burgers: Place each beef ball on the griddle. Using a spatula, press down firmly to flatten into a thin patty about ¼ inch thick. Season immediately with salt and pepper. Cook for 2-3 minutes until edges are crispy and browned.
