  • ¾ cup (150g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (175g) chocolate chips (semi-sweet or dark)
  • 2 tablespoons toasted sesame seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. Toast the sesame seeds in a dry skillet over medium heat for 2-3 minutes until golden and fragrant. Set aside to cool.
  3. Whisk together the dry ingredients: all-purpose flour, baking soda, and salt in a medium bowl.
  4. Cream the butter, tahini, brown sugar, and granulated sugar together until creamy and smooth, about 2-3 minutes.
  5. Beat in the egg and vanilla extract until fully incorporated and glossy.
  6. Gradually add the dry flour mixture to the wet ingredients, folding gently until no flour streaks remain. Avoid overmixing.
  7. Fold in the chocolate chips and toasted sesame seeds gently with a spatula.
  8. Scoop out dough balls about 2 tablespoons (30g) each onto the prepared baking sheets, spacing 2 inches apart. Flatten slightly with your fingers.
  9. Bake for 12-14 minutes until edges are golden but centers remain soft. Remove from oven and let cool on the baking sheet for 5 minutes.
  10. Transfer cookies to a wire rack to cool completely, about 10-15 minutes.

Notes
