Instructions

  1. Chop all vegetables and cut the chicken into 1-inch pieces. Mince garlic and measure out spices. (10-15 minutes)
  2. Heat 2 tablespoons olive oil or butter in a Dutch oven over medium-high heat. Add chicken pieces in a single layer and brown for 3-4 minutes per side. Remove chicken and set aside.
  3. In the same pot, sauté diced onion, carrots, and celery for 5-7 minutes until softened and slightly caramelized. Stir in minced garlic and cook for 30 seconds.
  4. Deglaze the pot with white wine or a splash of broth, scraping up browned bits.
  5. Return chicken to the pot. Add potatoes, chicken broth, thyme, rosemary, and bay leaf. Stir and bring to a gentle boil, then reduce heat to low and cover.
  6. Simmer for 25-30 minutes, stirring occasionally, until chicken is tender and potatoes are fork-soft.
  7. Whisk 2 tablespoons flour or cornstarch with 1/4 cup cold water until smooth. Slowly stir slurry into stew and cook uncovered for 5 minutes until thickened.
  8. Taste and adjust salt and pepper. Remove bay leaf. Stir in chopped fresh parsley.
  9. Ladle stew into warm bowls and serve immediately.
