A hearty, slow-cooked beef stew made with simple pantry staples and dry red wine. This recipe is designed for busy weeknights, offering tender beef and rich flavor with minimal active prep time.

Ingredients

Scale
  • 2–3 lbs beef chuck roast, cut into 1-inch cubes
  • 1 cup dry red wine (Cabernet, Merlot, or Pinot Noir)
  • 1 cup low-sodium beef broth
  • 2 tbsp tomato paste
  • 3 cloves garlic, minced
  • 1 large onion, diced
  • 3 medium carrots, peeled and cut into chunks
  • 2 large potatoes (Yukon Gold or Russet), peeled and cubed
  • 1 cup green beans, trimmed
  • 1 tsp dried thyme (or fresh sprigs)
  • 1/2 tsp dried rosemary (or fresh sprigs)
  • 1 bay leaf
  • 1 tbsp olive oil
  • 2 tbsp all-purpose flour
  • Salt and black pepper to taste

Instructions

  1. Pat beef cubes dry and toss with flour, 1 tsp salt, and 1/2 tsp pepper until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Sear beef cubes in batches until browned on all sides. Remove and set aside.
  3. While beef sears, chop carrots, potatoes, onion, and garlic, and trim green beans.
  4. Place seared beef, onions, carrots, potatoes, and green beans into the slow cooker.
  5. Sprinkle with dried thyme, rosemary, and add the bay leaf.
  6. Whisk together red wine, beef broth, and tomato paste. Pour over the beef and vegetables in the slow cooker and stir gently.
  7. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours until beef is fork-tender.
  8. Remove bay leaf. Taste and adjust seasoning. Optionally stir in 1 tbsp butter or a cornstarch slurry for thickness. Serve hot.

Notes

Do not skip searing the beef for better flavor. Use a wine you enjoy drinking. If the stew is too thin, mash some potatoes against the pot or use a cornstarch slurry. Potatoes may become mushy if frozen; thaw in fridge before reheating.
