A simple, 5-ingredient comfort food soup made in a slow cooker. Tender shredded chicken, soft egg noodles, and fresh dill create a soul-soothing meal perfect for cold days.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 2 cups wide egg noodles
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 1 small yellow onion, diced
  • 2 tablespoons fresh dill, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter
  • Salt and pepper to taste

Instructions

  1. Wash, peel, and dice the carrots, celery, and onion into bite-sized pieces. Mince the garlic.
  2. Place the diced carrots, celery, onion, and minced garlic into the bottom of a 4- to 6-quart slow cooker.
  3. Pour in the chicken broth. Place the chicken breasts on top of the vegetables (or add whole thighs).
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken from the pot and shred it using two forks. Discard skin or bones if using thighs.
  6. Stir the shredded chicken back into the slow cooker. Add the egg noodles and stir to distribute.
  7. Cook on high for an additional 30-45 minutes, stirring occasionally, until noodles are tender.
  8. About 5 minutes before serving, stir in the fresh dill and butter. Season with salt and pepper to taste.
  9. Ladle into bowls and serve immediately, garnishing with extra dill if desired.

Notes

Add noodles in the last 30-45 minutes of cooking to prevent them from becoming mushy. Shred chicken before adding noodles to ensure even heating. Use low-sodium broth to control salt levels. For a creamier texture, stir in heavy cream or coconut milk at the end. Leftovers thicken in the fridge; add broth or water when reheating.
