  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 24 oz jar marinara sauce
  • 4 cups low-sodium chicken broth
  • 14.5 oz can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 810 lasagna noodles, broken into 2-inch pieces
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese, plus more for serving
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Dice the onion and mince the garlic. Break the lasagna noodles into roughly 2-inch pieces. In a small bowl, mix together the ricotta, shredded mozzarella, and grated Parmesan. Set aside.
  2. Place the raw ground beef into the slow cooker insert. Add the diced onion, minced garlic, marinara sauce, chicken broth, undrained diced tomatoes, dried basil, dried oregano, salt, and pepper. Stir until combined.
  3. Cover and cook on low for 6-7 hours or on high for 3-4 hours. About 30 minutes before serving, stir in the broken lasagna noodles, making sure they are submerged. Cover and cook for another 20-30 minutes until noodles are tender.
  4. Taste the soup and adjust seasoning with additional salt, pepper, or oregano if needed.
  5. Ladle the hot soup into bowls. Drop generous spoonfuls of the ricotta mixture on top (about 2-3 dollops per bowl). Do not stir.
  6. Garnish with fresh parsley or basil if desired. Serve immediately with crusty bread or a side salad.

Notes

For best texture, add noodles in the last 30 minutes of cooking. Use no-boil lasagna noodles if available. Leftovers will thicken as noodles absorb liquid; add a splash of broth when reheating. For meal prep, keep noodles separate and add when reheating. The ricotta dollops are key—do not stir them in.
