  • 1 medium yellow onion, finely chopped
  • 3 garlic cloves, minced

  • ½ teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons tomato paste
  • 28 ounces (800g) canned crushed tomatoes
  • 4 cups (960ml) beef broth (low sodium recommended)
  • 6 ounces (170g) uncooked lasagna noodles, broken into bite-size pieces
  • 1 cup (240ml) ricotta cheese
  • ¼ cup fresh basil, chopped
  • Salt and black pepper, to taste
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat 2 tablespoons olive oil over medium heat in a large heavy-bottomed pot or Dutch oven.
  2. Add the finely chopped onion and cook until translucent, about 4 minutes.
  3. Add minced garlic and cook for another 1 minute until fragrant.
  4. Add ground beef, breaking it up with a spoon, and cook until browned and no longer pink, about 7-8 minutes. Season with salt and pepper as you go.
  5. Stir in 2 tablespoons tomato paste, 1 tablespoon Italian seasoning, and ½ teaspoon crushed red pepper flakes if using. Cook for 2 minutes to caramelize the tomato paste.
  6. Pour in 4 cups beef broth and the entire 28-ounce can of crushed tomatoes. Stir to combine, scraping up any browned bits from the bottom.
  7. Bring the mixture to a gentle boil, then reduce heat to a simmer and cook uncovered for about 10 minutes.
  8. Add broken lasagna noodles and simmer uncovered for another 10-12 minutes, stirring occasionally, until noodles are tender but not mushy.
  9. Taste and adjust seasoning with salt, pepper, and a pinch of sugar if needed.
  10. Ladle soup into bowls and top each serving with generous spoonfuls of ricotta cheese.
  11. Sprinkle chopped fresh basil and grated Parmesan cheese if desired.
  12. Serve immediately, stirring ricotta gently into the hot soup just before eating.
