  • 1/4 teaspoon (0.5 g) ground ginger
  • 1/8 teaspoon (0.25 g) ground nutmeg
  • Tiny pinch ground cloves
  • Pinch of salt
  • Oat whipping cream or coconut whipped cream (optional, for topping)
  • Cinnamon stick (optional, for garnish)
  • Star anise (optional, for garnish)
  • Extra pumpkin spice blend (optional, for garnish)

Instructions

  1. Combine the oat milk and pumpkin puree in a small saucepan. Whisk vigorously until fully incorporated and no orange streaks remain.
  2. Add the cinnamon, ginger, nutmeg, cloves, salt, and maple syrup. Whisk to distribute evenly.
  3. Heat the mixture over medium-low heat, stirring occasionally, until steaming and small bubbles form around the edges (about 3-4 minutes). Do not boil.
  4. Remove from heat and add the chai tea bags, pushing them under the surface. Steep for 4-5 minutes (3 minutes for milder flavor, 5 for bold).
  5. Remove the tea bags, pressing them against the side of the saucepan to extract flavor. Discard bags. Whisk again. If tea leaves escaped, strain through a fine-mesh strainer into a mug.
  6. Froth the latte using a handheld frother, or shake in a jar with a tight lid for 30 seconds, or use a French press.
  7. Pour into a mug. Top with oat whipped cream if desired. Dust with cinnamon or pumpkin spice blend. Garnish with a cinnamon stick and star anise if using.
