A rich, spicy, and comforting winter drink made in a slow cooker with dark chocolate, cinnamon, and a kick of chili powder. This forgiving recipe allows you to set it and forget it for a perfectly infused, adult-sized hot chocolate.

Ingredients

Scale
  • 4 cups whole milk
  • 1/2 cup dark cocoa powder (Dutch-processed recommended)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar
  • 2 whole cinnamon sticks
  • 1/2 teaspoon chili powder
  • A pinch of cayenne pepper (optional)
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a large bowl, whisk together the cocoa powder, brown sugar, chili powder, cayenne (if using), and salt to ensure even distribution.
  2. Pour the whole milk into the slow cooker. Add the whisked dry mixture to the cold milk and whisk vigorously until completely dissolved and smooth.
  3. Stir in the semi-sweet chocolate chips and heavy cream. Place the two cinnamon sticks into the pot.
  4. Cover the slow cooker and cook on low heat for 2 to 3 hours. Do not cook on high to prevent scorching or separation.
  5. Stir the mixture once or twice during cooking to distribute heat and prevent a skin from forming.
  6. Once the chocolate is melted and the drink is hot, use tongs to remove and discard the cinnamon sticks.
  7. Stir in the vanilla extract at the very end to preserve its flavor.
  8. Taste and adjust sweetness or spice level if needed.
  9. Ladle into warm mugs. Add alcohol (bourbon, rum, or tequila) right before serving. Top with whipped cream or extra cinnamon if desired.

Notes

Use whole milk or high-fat plant-based alternatives like canned coconut milk for the best texture. Do not add alcohol to the slow cooker as it will evaporate; add it after cooking. If using almond milk, the drink may be thinner and prone to separation. Ensure chocolate chips are fully melted before serving.
