A velvety, comforting soup made with roasted acorn squash, coconut milk, and fresh sage. This dairy-free friendly recipe delivers rich flavor and a silky texture perfect for cozy nights.

Ingredients

Scale
  • 2 medium acorn squash, peeled and cubed
  • 2 tbsp unsalted butter
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup fresh sage leaves
  • 4 cups vegetable broth
  • 1/2 cup full-fat canned coconut milk
  • 1 tbsp pure maple syrup
  • Sea salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Wash the acorn squash, cut it in half lengthwise, scoop out the seeds, peel the skin, and cut the flesh into 1-inch cubes.
  2. In a large pot, melt 2 tbsp butter over medium heat. Add diced onion and a pinch of salt; cook for 5-7 minutes until soft and translucent.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add the cubed squash and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until squash is fork-tender.
  5. Remove pot from heat. Blend soup until completely smooth using an immersion or countertop blender.
  6. Stir in coconut milk, maple syrup, salt, and pepper. Blend briefly to combine and adjust seasoning to taste.
  7. In a small skillet, heat butter or oil over medium heat. Fry sage leaves for 30-60 seconds per side until crisp and dark green. Remove to a paper towel.
  8. Ladle hot soup into bowls, top with crispy sage leaves, and serve immediately with crusty bread.

Notes

For a richer version, swap coconut milk for heavy cream. If using frozen squash, reduce broth slightly as it releases more water. To ensure a silky texture, strain through a fine-mesh sieve if your blender isn’t powerful enough. Sage leaves get soggy quickly, so add them right before serving.
