These Creamy Chocolate Peanut Butter Overnight Oats are a no-cook, 5-minute breakfast that tastes like a Reese’s cup in a bowl. Made with simple pantry staples, they’re perfect for meal prep and keep you full until lunch.

Ingredients

Scale
  • 1 cup (90g) old-fashioned rolled oats
  • 2 tablespoons (10g) unsweetened cocoa powder
  • 2 tablespoons (32g) creamy peanut butter
  • 1 tablespoon (12g) chia seeds
  • 12 tablespoons (15-30ml) maple syrup or honey
  • 1 cup (240ml) milk of choice (whole milk, oat milk, almond milk, etc.)
  • 1/2 teaspoon (2.5ml) vanilla extract
  • Pinch of salt
  • Optional mix-ins: mini chocolate chips, chopped peanuts, banana slices, extra peanut butter for topping

Instructions

  1. Combine the dry ingredients: In a mason jar or airtight container, add 1 cup old-fashioned rolled oats, 2 tablespoons unsweetened cocoa powder, and 1 tablespoon chia seeds. Stir with a fork to break up any clumps.
  2. Add the wet ingredients: Add 2 tablespoons creamy peanut butter, 1-2 tablespoons maple syrup, 1/2 teaspoon vanilla extract, and a pinch of salt. Pour in 1 cup of your milk of choice.
  3. Stir vigorously: Use a fork or whisk to mix everything together, scraping the bottom and corners. Stir for about 30 seconds until the mixture is uniform and the peanut butter is fully incorporated.
  4. Taste and adjust: Adjust sweetness or chocolate flavor to your preference by adding more maple syrup or cocoa powder.
  5. Seal and refrigerate: Put the lid on the container and refrigerate for at least 4 hours, preferably overnight.
  6. Stir again before eating: In the morning, stir the oats well. If too thick, add a splash of milk and stir.
  7. Add toppings: Top with sliced banana, a drizzle of peanut butter, mini chocolate chips, or chopped peanuts as desired.

Notes

Use old-fashioned rolled oats for best texture; quick oats turn mushy. Chia seeds are essential for the pudding-like texture. For best results, stir the mixture again 30 minutes after refrigerating to distribute chia seeds evenly. Oats can be stored in the fridge for up to 5 days. To serve warm, microwave for 30-45 seconds.
