  • 1 teaspoon (5ml) lemon juice
  • 1/4 cup (22g) rolled oats (for topping)
  • 2 tablespoons (15g) all-purpose flour
  • 2 tablespoons (25g) packed brown sugar
  • 2 tablespoons (28g) cold unsalted butter, cubed
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Make the crisp topping: In a small bowl, combine 1/4 cup rolled oats, 2 tablespoons all-purpose flour, 2 tablespoons packed brown sugar, and 1/4 teaspoon cinnamon. Add 2 tablespoons cold butter cut into small cubes. Use your fingers or a fork to work the butter into the dry ingredients until the mixture looks like coarse crumbs with some pea-sized butter pieces remaining.
  2. Heat a small skillet over medium heat. Add the crumble mixture and cook, stirring frequently, for 3-4 minutes until golden brown and fragrant. Remove from heat immediately and spread on a plate to cool completely.
  3. Prepare the apples: Wash and core the apple. Dice into small, even cubes about 1/4 inch in size. In a small bowl, toss the diced apple with 1 tablespoon maple syrup or brown sugar, 1/2 teaspoon cinnamon, and 1 teaspoon lemon juice. Stir until every piece is coated. Let it sit while you prepare the oat base.
  4. Mix the creamy oat base: In a medium bowl, combine 1 cup rolled oats, 1 cup milk, 1/2 cup Greek yogurt, 2 tablespoons maple syrup, 1 teaspoon vanilla extract, 1 teaspoon cinnamon, and a pinch of salt. Stir until everything is evenly combined.
  5. Layer the jars: Divide the oat base evenly between two pint-sized jars. Spoon half the apple mixture on top of the oats in each jar, spreading it evenly. Do not stir.
  6. Screw on the lids and refrigerate for at least 6 hours, preferably overnight.
