  • 1/4 cup (25g) unsweetened cocoa powder
  • 3 tablespoons (45ml) honey or maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • 1/4 cup (40g) dark chocolate chips (optional)
  • 1/3 cup (80ml) heavy cream or coconut cream (optional)
  • Pinch of salt

Instructions

  1. Drain the cottage cheese in a fine mesh strainer for about 5 minutes to remove excess liquid.
  2. Transfer the drained cottage cheese to a blender or food processor. Add cocoa powder, honey or maple syrup, vanilla extract, and a pinch of salt. Blend on high speed for 2-3 minutes until smooth and creamy.
  3. In a separate bowl, whip the heavy cream or coconut cream until soft peaks form (optional).
  4. Gently fold the whipped cream into the blended cottage cheese mixture, keeping as much air as possible. Stir in dark chocolate chips if using.
  5. Spoon the mousse into serving glasses or bowls. Cover and refrigerate for at least 30 minutes to firm up and meld flavors.
  6. Serve chilled, garnished with fresh berries, a sprinkle of cocoa powder, or mint leaves if desired.

Notes

Drain cottage cheese well to avoid watery mousse. Blend thoroughly for a silky texture but avoid over-blending to prevent runniness. Whipping cream separately and folding it in adds extra creaminess but is optional. Chill mousse for at least 30 minutes for best flavor and texture. Variations include adding peanut butter, berries, spices, or espresso. For vegan or dairy-free versions, substitute cottage cheese with silken tofu and use coconut cream.
