creamy crockpot mashed potatoes - featured image

A foolproof slow cooker mashed potato recipe that yields fluffy, velvety results without the gluey texture. Using russet potatoes, cream cheese, and butter, this dish is perfect for busy weeknights or holiday gatherings.

Ingredients

Scale
  • 6 large Russet potatoes, peeled and cut into 1-inch cubes
  • 1 stick unsalted butter, cubed
  • 8 oz block full-fat cream cheese, room temperature
  • 1 cup heavy cream or whole milk
  • 1 tsp garlic powder
  • Kosher salt to taste
  • Freshly cracked black pepper to taste

Instructions

  1. Peel the russet potatoes and cut them into uniform 1-inch cubes. Place them in a large bowl of cold water to soak for at least 10 minutes to remove excess starch.
  2. Drain the potatoes thoroughly in a colander and shake off excess water.
  3. Transfer the drained potatoes to a slow cooker. Add the cubed butter, cream cheese block, garlic powder, and heavy cream. Stir gently to combine.
  4. Cover and cook on Low for 4 to 5 hours, until the potatoes are tender and a fork slides off easily.
  5. Turn off the slow cooker and let the potatoes sit for 5 minutes to cool slightly.
  6. Mash the potatoes using a hand masher or ricer until smooth. Stir in any remaining unmelted cream cheese.
  7. Season with salt and pepper to taste. Serve immediately while hot and fluffy.

Notes

Do not cook on High as it can make the potatoes gluey. Ensure potatoes are drained thoroughly to avoid watery mash. For a dairy-free version, use dairy-free butter, cream cheese, and oat milk. If potatoes are too thick after cooking, add a splash of milk. If watery, leave the lid off for the last 30 minutes.
