A simple, slow-cooker dinner featuring tender bone-in pork chops in a rich, savory mushroom sauce made with canned soup and dried onion mix. Perfect for busy weeknights.

Ingredients

Scale
  • 2 to 3 pounds bone-in pork chops (about 1 inch thick)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 packet (1 oz) dried onion soup mix
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 2 tablespoons butter
  • Salt and black pepper to taste
  • 1/2 cup water or chicken broth (optional, for thinning sauce)

Instructions

  1. Pat pork chops dry with paper towels and season both sides generously with salt and pepper.
  2. Heat butter in a large skillet over medium-high heat. Sear pork chops for 2-3 minutes on each side until golden brown. Remove and set aside.
  3. In a large bowl, whisk together cream of mushroom soup, dried onion soup mix, garlic powder, dried thyme, and water/broth until smooth.
  4. Pour half of the sauce mixture into the bottom of a 6-quart slow cooker.
  5. Place seared pork chops on top of the sauce in the slow cooker.
  6. Pour the remaining sauce over the chops, ensuring they are mostly covered.
  7. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until pork is tender and reaches an internal temperature of 145°F.
  8. Remove pork to a serving platter. If sauce is too thin, simmer on HIGH for 30 minutes or thicken with a cornstarch slurry.
  9. Serve immediately with mashed potatoes, egg noodles, or rice.

Notes

Bone-in chops are recommended to prevent drying out. If using boneless chops, reduce cooking time significantly. Searing the chops adds depth of flavor but is optional. For a richer sauce, stir in heavy cream or cream cheese at the end. Check labels on soup and onion mix for gluten-free options.
