A simple, comforting slow-cooker meal featuring tender chicken, white beans, and green chiles in a rich, creamy sauce made with cream cheese. It’s ready in under 15 minutes of prep and delivers restaurant-quality comfort food with minimal effort.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (4 oz) can diced green chiles, including liquid
  • 1 (15 oz) can cannellini or Great Northern beans, rinsed and drained
  • 2 cups low-sodium chicken broth
  • 8 oz block full-fat cream cheese, cubed
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • Salt and black pepper to taste
  • Juice of 1 lime

Instructions

  1. Trim excess fat from chicken breasts and place them at the bottom of a 6-quart slow cooker.
  2. Sprinkle diced onion and minced garlic over the chicken.
  3. Pour in chicken broth and add the can of green chiles with their liquid. Stir gently.
  4. Add rinsed white beans and sprinkle cumin, chili powder, oregano, salt, and pepper over the top. Stir to combine.
  5. Cover and cook on HIGH for 4 hours or LOW for 6-7 hours until chicken reaches 165°F and shreds easily.
  6. Remove chicken from the pot and shred it using two forks.
  7. Return shredded chicken to the slow cooker and add cubed cream cheese. Stir gently until melted.
  8. If cream cheese isn’t fully melted, cook on HIGH for 15-20 minutes, stirring occasionally.
  9. Stir in fresh lime juice and adjust seasoning with salt and pepper if needed.

Notes

For best texture, use full-fat cream cheese as light versions may separate. If the chili is too thick, add a splash of broth; if too thin, cook uncovered on HIGH for 30 minutes. This recipe is naturally gluten-free if using certified gluten-free broth and spices. Can be adapted for Instant Pot by pressure cooking for 10 minutes.
