A quick, hands-off slow cooker meal that delivers rich, creamy texture and bold flavor using simple ingredients like white beans, chicken, and spices. Perfect for busy weeknights and meal prep.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts
  • 2 cans (15 oz each) cannellini beans or Great Northern beans, rinsed and drained
  • 1 can (4 oz) diced green chilies
  • 32 oz (4 cups) low-sodium chicken broth
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup frozen corn kernels
  • 1/2 cup heavy cream or 4 oz cream cheese (optional)
  • 1 fresh jalapeño, minced (optional)

Instructions

  1. Place chicken breasts into the bottom of a 4-6 quart slow cooker.
  2. Add rinsed and drained cannellini beans on top of the chicken.
  3. Pour in chicken broth and add diced green chilies with their juice.
  4. Sprinkle in cumin, garlic powder, oregano, salt, and pepper. Stir gently to combine.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.
  6. Remove chicken and shred into bite-sized pieces using two forks.
  7. Use an immersion blender to blend about one cup of the bean mixture directly in the pot to create a creamy base.
  8. Stir shredded chicken and frozen corn back into the pot.
  9. Stir in heavy cream or cream cheese until fully incorporated and smooth.
  10. Taste and adjust seasoning, then serve immediately.

Notes

For a thicker chili, blend more beans or simmer uncovered for the last 30 minutes. If using frozen chicken, add 30 minutes to cooking time. Ensure chicken reaches 165°F. For dairy-free, use coconut cream. For vegetarian, swap chicken for chickpeas and use vegetable broth.
