A quick, creamy, and earthy soup featuring roasted delicata squash and crispy sage. This easy 20-minute recipe requires no peeling and delivers rich, comforting flavors perfect for fall.

Ingredients

Scale
  • 2 medium delicata squash, halved and seeded, cut into ½-inch half-moon slices
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth (low-sodium)
  • ½ cup heavy cream
  • 1 tablespoon fresh sage leaves, roughly chopped
  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Salt and black pepper to taste
  • A pinch of nutmeg
  • 1 tablespoon olive oil (for roasting)
  • 1 tablespoon olive oil (for frying sage)
  • 2 tablespoons roasted pepitas (for garnish)
  • Crème fraîche (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash squash, cut in half lengthwise, scoop out seeds, and slice into ½-inch half-moons. Leave skin on.
  3. Toss squash slices with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a rimmed baking sheet.
  4. Roast squash for 20-25 minutes until edges are browned and flesh is tender. Let cool slightly.
  5. While squash roasts, melt butter in a large Dutch oven over medium heat. Add diced onion and a pinch of salt; cook 5-7 minutes until soft.
  6. Add minced garlic and thyme; cook for 1 minute until fragrant.
  7. Add roasted squash and any pan juices to the pot. Pour in broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  8. Remove from heat. Use an immersion blender to puree soup until smooth. Stir in heavy cream and season with salt, pepper, and nutmeg.
  9. In a small skillet, heat 1 tablespoon olive oil over medium heat. Fry sage leaves for 30-60 seconds until crispy. Remove and drain on paper towels.
  10. Ladle soup into bowls. Top with crispy sage, crème fraîche, and roasted pepitas. Serve immediately.

Notes

Do not skip roasting the squash, as boiling makes it watery and bland. The skin of the delicata squash is edible and adds fiber. If using a countertop blender, blend in batches and hold the lid down with a towel to let steam escape. The soup thickens as it cools; add extra broth when reheating.
