Instructions

  1. Warm the milk: Pour 2 cups (480 ml) of whole milk into a medium saucepan over medium-low heat. Heat gently, stirring occasionally, until steaming but not boiling, about 4-5 minutes.
  2. Mix cocoa and sugar: In a small bowl, combine 2 tablespoons (15 grams) unsweetened cocoa powder, 2 tablespoons (25 grams) granulated sugar, and a pinch of salt.
  3. Create a cocoa paste: Add about 2 tablespoons of the warm milk to the cocoa-sugar mix and whisk until smooth.
  4. Combine and whisk: Pour the cocoa paste back into the warm milk, whisking continuously. Keep heat low and stir until fully combined and hot (not boiling), about 2-3 minutes.
  5. Add vanilla: Remove saucepan from heat and stir in 1 teaspoon vanilla extract.
  6. Serve immediately: Pour into mugs and top with mini marshmallows or whipped cream if desired. Optionally sprinkle cinnamon or chocolate shavings.

Notes

Warm milk slowly to avoid scalding and bitterness. Make a cocoa paste with a small amount of milk first to prevent lumps. Do not boil the mixture. Use real vanilla extract for best flavor. Adjust sugar to taste. Dry mix can be prepared ahead and stored in an airtight jar for quick preparation.
