A rich, velvety slow cooker potato soup made with simple pantry staples. Russet potatoes break down naturally to create a thick, hearty base without heavy roux, topped with sharp cheddar, crispy bacon, and green onions for ultimate comfort.

Ingredients

Scale
  • 3 lbs large Russet potatoes, peeled and diced into 1-inch cubes
  • 4 tbsp unsalted butter
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1.5 cups sharp cheddar cheese, freshly shredded
  • 1 cup crispy bacon bits
  • 4 stalks green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large skillet over medium heat. Add diced onion and cook until soft and translucent (4-5 minutes). Add minced garlic and cook for 1 minute until fragrant.
  2. Peel and dice potatoes into 1-inch cubes. Rinse in cold water to remove excess starch and drain well.
  3. Transfer sautéed onions and garlic to a 6-quart slow cooker. Add diced potatoes, chicken broth, salt, and pepper. Stir to combine.
  4. Cover and cook on LOW for 6-7 hours (or HIGH for 3-4 hours) until potatoes are tender.
  5. For a thicker texture, use an immersion blender to pulse the soup a few times or mash about half of the potatoes against the side of the pot.
  6. Stir in heavy cream and shredded cheddar cheese. Cover and cook on HIGH for an additional 15-20 minutes until cheese is melted and soup is heated through. Do not boil vigorously.
  7. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with extra cheese, bacon bits, and sliced green onions.

Notes

Use Russet potatoes for the best creamy texture as they have high starch content. Sautéing the onions first adds significant flavor depth compared to dumping them in raw. Add cheese and cream only in the last 15-20 minutes to prevent graininess or separation. For a vegetarian version, swap chicken broth for vegetable broth and use vegetarian bacon bits. Leftovers thicken in the fridge; thin with extra broth or milk when reheating.
