This creamy make-ahead garlic herb mashed potato casserole is rich, comforting, and forgiving. Made with Yukon Gold potatoes, butter, cream cheese, sour cream, garlic, and fresh herbs, it can be assembled up to two days in advance for stress-free holiday entertaining.

  • 3 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks
  • 6 tablespoons unsalted butter, softened
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup whole milk, warmed
  • 4 cloves garlic, minced
  • 1 teaspoon salt, plus more for the water
  • 1/2 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 350°F. If making ahead, you’ll bake later.
  2. Place peeled and cut potatoes in a large pot and cover with cold water by about an inch. Add a generous tablespoon of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 15-20 minutes until fork-tender.
  3. Drain potatoes in a colander, then return to the hot pot (off heat) for about 2 minutes to let excess moisture evaporate.
  4. Mash potatoes using a ricer or masher until smooth but not overworked.
  5. Add softened butter and cream cheese to hot potatoes. Stir gently until fully melted and incorporated.
  6. Fold in sour cream, warm milk, minced garlic, salt, and pepper using a rubber spatula until combined. Taste and adjust seasoning.
  7. Spread mashed potatoes evenly into a greased 9×13-inch baking dish. Smooth the top.
  8. In a small bowl, combine panko breadcrumbs, melted butter, parsley, chives, thyme, garlic powder, and Parmesan (if using). Stir until evenly coated.
  9. Sprinkle breadcrumb mixture evenly over the potatoes. Do not press in.
  10. If serving immediately: Bake uncovered for 25-30 minutes until topping is golden brown and edges are bubbling. Let rest 5 minutes before serving.
  11. If making ahead: Cover assembled casserole (without topping) with foil and refrigerate up to 2 days. When ready to bake, add topping and bake covered at 350°F for 30 minutes, then uncover and bake 15-20 minutes more until hot and bubbly.

Notes

Don’t overwork the potatoes or they’ll become gluey. Warm the milk before adding. Let cream cheese soften to room temperature. Season the boiling water generously. For extra crunch, toast panko in a dry skillet before mixing. The casserole tastes even better the next day as flavors meld.
