A quick, comforting, and creamy chicken soup made with sun-dried tomatoes, rotisserie chicken, and heavy cream. This easy weeknight dinner comes together in under 30 minutes using simple pantry staples.

Ingredients

Scale
  • 2 cups shredded rotisserie chicken
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, chopped
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Heat olive oil and butter in a large pot or Dutch oven over medium heat. Add diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for 1 minute until fragrant.
  2. Add chopped sun-dried tomatoes to the pot and toast for 1-2 minutes to intensify their flavor.
  3. Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add shredded chicken and bring to a gentle simmer for 5 minutes.
  4. Reduce heat to low and stir in heavy cream. Simmer gently for 3-4 minutes without boiling to prevent curdling.
  5. Stir in Parmesan cheese until melted. Season with salt, black pepper, and red pepper flakes to taste. Remove from heat.
  6. Stir in fresh basil. Serve immediately in warm bowls, garnished with extra Parmesan or a drizzle of olive oil if desired.

Notes

Do not let the soup boil vigorously after adding the cream to prevent curdling. For a thicker soup, mash some sun-dried tomatoes against the side of the pot. Leftovers can be stored in the refrigerator for up to 3 days. When reheating, add a splash of broth or water if the soup has thickened too much. For a dairy-free version, substitute heavy cream with full-fat coconut cream.
