A creamy, comforting one-pot chicken dish with sun-dried tomatoes, Parmesan, and fresh basil, perfect for busy weeknights and minimal cleanup.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts (medium-sized)
  • Salt and pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  • 1 cup (240 ml) chicken broth
  • 3/4 cup (180 ml) heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • A handful of fresh basil, chopped

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper.
  2. Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. Once shimmering, add the chicken breasts and cook for about 4-5 minutes per side until golden brown but not fully cooked through. Remove chicken and set aside.
  3. Reduce heat to medium, add minced garlic and chopped sun-dried tomatoes to the same pan. Stir constantly for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Pour in 1 cup chicken broth, scraping the bottom of the pan to release browned bits.
  5. Stir in 3/4 cup heavy cream, 1/2 cup grated Parmesan cheese, 1 teaspoon Italian seasoning, and a pinch of red pepper flakes if using. Let the sauce simmer gently for 3-5 minutes until it thickens slightly.
  6. Nestle the browned chicken breasts back into the sauce. Spoon some sauce on top. Reduce heat to low, cover, and cook for another 10 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  7. Just before serving, sprinkle chopped fresh basil over the top.

Notes

Do not overcrowd the pan when searing chicken to ensure a good sear. Use fresh garlic and freshly grated Parmesan for best flavor. Keep sauce at a gentle simmer to avoid curdling. If sauce is too thick, add a splash of broth or cream. To thicken a runny sauce, whisk in a slurry of 1 teaspoon cornstarch mixed with 1 tablespoon cold water. For a dairy-free version, substitute heavy cream with coconut milk and Parmesan with nutritional yeast.
