A quick, 5-minute no-cook breakfast recipe featuring rolled oats, creamy peanut butter, and ripe bananas. This meal-prep friendly dish offers a creamy, pudding-like texture and sustained energy for busy mornings.

Ingredients

Scale
  • 1 cup (90g) Old-Fashioned Rolled Oats
  • 3/4 cup (180ml) Milk (dairy or plant-based like almond, oat, or soy)
  • 2 tablespoons (32g) Creamy Peanut Butter
  • 1 medium Ripe Banana
  • 1 tablespoon (10g) Chia Seeds (optional)
  • 1 teaspoon (5ml) Maple Syrup or Honey (optional)
  • 1/2 teaspoon Cinnamon
  • A tiny pinch of Salt
  • Optional toppings: Extra peanut butter, granola, sliced bananas

Instructions

  1. Mash the banana in a medium bowl using a fork until mostly smooth with a few small chunks left.
  2. In the bowl or directly in a mason jar, combine the milk, mashed banana, peanut butter, maple syrup (if using), cinnamon, and salt. Whisk or stir vigorously until the peanut butter is fully dissolved and the mixture is uniform.
  3. Add the rolled oats and chia seeds to the liquid. Stir well to ensure oats are fully submerged. Add a splash more milk if needed.
  4. Seal the jar tightly with a lid and place it in the refrigerator for at least 4 hours, ideally overnight (8-12 hours).
  5. When ready to eat, remove from the fridge and stir well. Add a splash of milk if the consistency is too thick. Top with granola or extra banana slices if desired.

Notes

Do not use quick oats as they turn to mush, and avoid steel-cut oats as they won’t soften enough. Ensure peanut butter is fully emulsified into the milk to avoid clumps. Use ripe, brown-spotted bananas for natural sweetness and better texture. Store in the fridge for up to 5 days. Can be microwaved for 30-60 seconds for a warm version.
